Conrad Distillery is more than a craft distillery — it is a story of sustainability, innovation, and heart. Guided by Master Distiller Debra Spence, we transform rescued Australian wine into premium gin, vodka, and liqueurs through the traditional Irish triple-pot distillation method. Our journey began in Queensland’s Wine & Granite Belt, where resilience, heritage, and a commitment to eco-friendly distilling came together to create spirits defined by purity, purpose, and unmistakable Australian character.

Distilled With Intention
Guided by Master Distiller Debra Spence, Conrad Distillery’s spirits are a testament to patience, precision, and passion. Each batch is copper distilled using the Irish triple pot distillation method, where only the “heart” of the spirit is kept. Between each distillation, the spirit rested for 30 days before being refined again. This unique ensures smoothness, purity, and depth of flavour.
Debra and her team are obsessive commitment to excellence ensures that every drop reflects the highest standard of Australian craftsmanship.

Our spirits begin not in the still, but in the vineyard — born of wine, rescued, reimagined, and transformed with purpose. Every drop carries the legacy of the land and the resilience of those who work it.

At 925 metres above sea level, nature becomes both collaborator and muse. The thin mountain air refines, the cool climate tempers, and the landscape humbles. Refined by elevation, our craft is shaped by altitude and attitude — by choosing mastery over haste and integrity over shortcuts.

And now, with our new emblem — a golden hawk rising in full flight — we celebrate what Conrad has always stood for: freedom, excellence, and inspiration. HOW IT BEGAN

In the summer of 2019–2020, before lockdowns and border closures, Australia faced one of its hardest chapters. The drought-stricken landscape burned as bushfires tore through Queensland’s Wine Country, devastating homes, vineyards, and livelihoods
Even vineyards spared by flames were not untouched. Smoke taint had invaded the grapes, leaving thousands of litres of fine Australian wine unsellable — destined for landfill. Yet where others saw loss, Conrad Distillery saw possibility.

Born from the belief that beauty can rise from ruin, we developed a sustainable solution through the art of triple pot distillation. By transforming these unsellable wines into clean, pure spirit, we remove impurities while preserving the essence of the land. The result is a collection of award-winning Australian gin, vodka, and liqueurs — elegant, smooth, and sustainably crafted from rescued wine.

From fire-damaged vineyards to world-class spirits, Conrad Distillery was not founded on profit, but on purpose — to redefine sustainability and craftsmanship in Australian distilling.
