At Conrad Distillery, we choose triple pot distillation because it gives us greater control over the character, smoothness and refinement of our spirits.
Our approach is inspired by the tradition of Irish whiskey production, where triple distillation has long been associated with creating lighter, smoother and more refined spirits.
But there is an important distinction.
For us, triple distillation means taking the spirit through three separate pot distillations. It is not simply passing spirit through multiple chambers within a still. Each distillation is a separate stage, giving our distiller another opportunity to assess the spirit and carefully select what progresses to the next stage.
Each distillation further refines the spirit. Components we don’t want can be separated while the character we are looking for is progressively concentrated.
The result is the clean, smooth style that has become an important part of the Conrad Distillery signature.
Distillation isn’t simply about producing a higher-strength alcohol. It is about deciding what makes it into the bottle.
Three separate pot distillations give us multiple opportunities to make considered cuts and shape the final spirit.
This allows us to retain desirable aromas and flavours while reducing harsher characteristics, creating a spirit with greater balance and finesse.
Triple pot distillation can produce a lighter and more elegant spirit while still retaining character.
For Conrad, that balance is important.
We aren’t trying to remove every trace of flavour. We want to refine the spirit without stripping away the qualities that make it interesting.
Smooth should never mean characterless.
Triple pot distillation isn’t the quickest way to make a spirit.
Every additional distillation requires more time, energy and attention from the distiller. For a small craft distillery, that matters.
But efficiency isn’t our only measure of success.
We choose the process because it gives us the control required to create the style of spirit we want to put the Conrad name on.

With our family’s connection to Ireland, triple pot distillation allows us to acknowledge a distilling tradition that has helped shape some of the world’s most recognised whiskey styles.
We respect that tradition while applying our own approach, ingredients and philosophy here in Australia.
Ultimately, the number of times a spirit is distilled matters less than what the distiller does during those distillations.
For us, triple pot distillation provides another layer of control. It gives us three opportunities to refine the spirit, make careful cuts and pursue the balance between purity, flavour and texture that defines Conrad.
It takes longer.
It requires patience.
And that’s precisely why we do it.
